Berries and Cream

Serve berries and cream over a fluffy cream biscuit and serve for dessert, breakfast, or a summertime treat!

Ingredients

  • ⅔ cup + 1 tbsp heavy cream
  • ½ cup self-rising flour
  • 1 cup mixed berries
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ¼ cup sugar
  • ¼ cup water
  • ¼ cup mint leaves

Instructions

  1. Preheat oven to 475º F.
  2. Set aside ⅓ cup heavy cream for whipped topping. In a medium bowl, stir together the remaining cream and self-rising flour.
  3. On a floured surface, roll out the dough. Fold in half and repeat about 7 times. Using a biscuit cutter or mason jar lid, cut dough into ½ inch thick biscuits.
  4. Bake on a parchment-lined sheet for 10-12 minutes or until the tops are golden brown.
  5. While the biscuits bake, heat water and sugar in a medium skillet over medium heat. Add berries, cinnamon, and vanilla extract. Stir until it begins to bubble and remove from heat.
  6. Using a hand mixer or similar, whip the ⅓ cup heavy cream until soft peaks begin to form, about 3-5 minutes.
  7. Remove the biscuits from the oven. Top with warm berry compote and whipped cream, and garnish with fresh mint leaves.
  8. Serve and enjoy!
