Honey Balsamic Strawberry Shortcake on Biscuits

Take your strawberry shortcake to the next level with honey and balsamic macerated strawberries, topped with basil whipped cream, and served over cream biscuits.

Ingredients

For the strawberries:

  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 2 pounds fresh strawberries, halved

For the basil whipped cream:

  • 1 cup heavy cream
  • 1/4 cup sweet basil leaves
  • 1/4 cup sugar
  • 1/4 cup water

Instructions

  1. Follow the recipe for cream biscuits and set aside.
  2. Make the basil simple syrup. Allow it to cool completely before adding it to your whipped cream.
  3. Bring 1/4 cup water to a simmer in a small saucepan.
  4. Add 1/4 cup sugar and stir until it dissolves. Don't allow the sugar and water mixture to heat above a simmer.
  5. Once the sugar is completely dissolved, remove the saucepan from heat.
  6. Add 1/4 cup basil leaves and gently stir together with the simple syrup. Cover with a lid and set aside.
  7. Meanwhile, prepare the honey balsamic strawberries.
  8. In a small saucepan, mix together 1/2 cup balsamic vinegar and 1/4 cup honey.
  9. Cook over medium heat, whisking constantly, for about 5 minutes.
  10. While the balsamic vinegar and honey simmer, prepare your strawberries.
  11. Rinse and dry strawberries. Cut off the tops and slice in half lengthwise (from the top). Set aside.
  12. Once the honey balsamic mixture has slightly thickened, remove from heat and add 1 tsp vanilla extract.
  13. In a medium bowl, drizzle honey and balsamic mixture over the halved strawberries and set aside to let cool.
  14. Strain the basil leaves from the simple syrup and chill in the fridge until completely cool.
  15. Meanwhile, begin making your whipped cream.
  16. Using the whisk attachment on a handheld mixer, immersion blender, or with a Kitchen Aid mixer, begin whipping the heavy cream.
  17. As soft peaks begin to form, slowly add the cooled basil simple syrup.
  18. Continue to whip the cream until the peaks hold their form.
  19. Slice cream biscuits in half and assemble the strawberry shortcakes.
  20. Spoon about 1/4 cup strawberry maceration over the bottom half of a biscuit and top with basil whipped cream.
  21. You can add the top half of the biscuit over the whipped cream, or use to make more shortcakes.
